Sweet Potato Brownies


These sweet potato brownies got me feelin some type of way! If you are a sweet treat junky then you have to try these, they taste just like regular brownies. But they're gluten free, refined sugar free, packed with collagen and protein .. what's not to love here!? I liked using the tins so I could practice a little self control but I have a feeling they won't last long. (I store these in the fridge and they last a week for optimal freshness). I use these as dessert after dinner or even a mid day snack, usually with peanut butter drizzled over the top!

INGEDIENTS 1 large sweet potato 4 scoops collagen peptides (substitute 2-3 scoops pea protein powder for vegetarian option) 3tbs cacao powder 2 eggs 3tbs coconut oil 2tbs honey (optional substitute is pure maple syrup or opt out of this step to make it sugar free) 1tsp cinnamon 1tbs vanilla extract 1tsp baking powder 1/2 chocolate bar/ 1/4 cup chocolate chips (I used 85% dark chocolate) Pink Himalayan salt . . . DIRECTIONS 1. Peel skin off potato and boil in medium sauce man until sweet potato is soft 2. Thoroughly mash potato in bowl, then add all other ingredients except chocolate chunks and mix together until smooth and even texture 3. Coat baking tin with coconut oil then add mixture to individual cupcake tins 4. Add even amount of chocolate chunks to each tin 5. Bake for 25 minutes (or until toothpick comes out clean) on 350 degrees

* You can mix it up and add blueberries or peanut butter!
